  • 2 tablespoons butter
  • 14 cup onion, minced
  • 2 tablespoons flour
  • 1 12 cups half-and-half
  • 1 12 lbs Baby Spinach, rinsed
  • 12 teaspoon kosher salt
  • 14 teaspoon pepper
  • 18 teaspoon nutmeg
  • 12 tablespoon butter

    melt butter over medium heat.

    add onions and cook until soft.

    Add the flour, stir until golden brown.

    Add the half and half.

    Simmer until sauce has thickened enough to coat the back of a spoon.

    Add the spinach in two parts, covered, each for four minutes.

    Stir until wilted.

    Add salt, pepper, and nutmeg.

    Use a stick blender to lightly puree.
