- 2 lb. fresh spinach
- 1 c. water
- 1 Tbsp. butter
- 1 Tbsp. flour
- 1/2 c. milk
- 1/2 c. cream
- 1/2 tsp. salt
- 1 small onion, grated
Directions

1Wash spinach well to remove sand.

2Separate leaves and cut off roots.

3Bring water to boil in pot and add spinach.

4Boil, uncovered, for about 2 minutes.

5Drain and chop fine.

6Melt butter and blend in the flour.

7Add milk slowly and then the cream; stir constantly until smooth.

8Bring to boil for about 1 minute.

9Add chopped spinach.
-
10Mix and heat through.

11Add salt and grated onion; mix well.

12Heat for another minute.

13Serves 6.
