Creamed Spinach

Ingredients

  • 4 boxes frozen spinach
  • 2 T butter
  • 1 1/2 C fresh mushrooms, sliced
  • 1/2 C heavy cream
  • 1 1/2 C shredded sharp cheddar cheese
  • 4 scallions, chopped
  • Pinch, nutmeg
  • Salt & Pepper to taste

    1. Preheat oven to 350 F

    2. Remove spinach from boxes and defrost completely (either on the stovetop or microwave); drain very well and set aside.

    3. Melt butter in sauce pan and saute mushrooms.

    4. Add heavy cream, bring to a simmer.

    5. Add salt and pepper to cream and mushroom mix, along with a pinch of nutmeg.

    6. Add spinach to cream, butter, and mushrooms, then put mixture into a casserole dish. Cover with a layer of shredded cheese.

    7. Bake for 30 minutes or until the dish is hot all the way through and the cheese is bubbling.
