- 6 Tbsp. bacon drippings or butter
- 6 c. diced raw potatoes
- 1 medium size onion, chopped (1/2 c.)
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 small can evaporated milk
Directions

1Melt drippings or butter in large frying pan; stir in potatoes, onion, salt and pepper.

2Cover; cook over low heat 10 minutes.

3Uncover; stir from bottom of pan, then saute over low heat, turning often for 15 minutes.

4Pour evaporated milk over heat, stirring gently 1 to 2 minutes longer.

5Serves 6.
