Creamy Lemon Pineapple Salad

  • 2 (8 oz.) pkg. Philadelphia cream cheese, softened
  • 1 small pkg. lemon Jell-O
  • 1 large can crushed pineapple, drained and save juice
  • 1/2 pt. whipping cream
  • 2/3 c. celery, cut fine
  • 1/2 c. nut meats (usually pecans)
  • 1/8 tsp. salt

Directions

    Drain juice from pineapple (save).

    Mix cheese, pineapple, celery, nut meats and salt.

    Heat juice and mix in Jell-O.

    Add to cheese mixture.

    Whip the cream and fold into cheese mixture. Pour into low baking dish.

    Chill.

    Cut into squares and serve on bed of lettuce.
