Creamy Lower Fat Mac & Cheese

  • 1 lb macaroni noodles, cooked in salted water
  • 3 12 cups skim milk
  • 2 tablespoons butter, room temperature
  • 3 tablespoons flour
  • 2 12 teaspoons ground mustard
  • 1 teaspoon garlic powder
  • 1 12 teaspoons onion powder
  • 12 teaspoon cayenne pepper
  • 1 lb Velveeta reduced fat cheese product, cubed (The brand I have is Land O Lakes, though Velveeta would work too)
  • 1 12 cups sharp cheddar cheese, shredded
  • salt & freshly ground black pepper (I have to use 4 teaspoons of salt because of type of cheese I use)

Directions

    Cook pasta in salted water, drain and set aside.

    Mix the flour into the butter making a thick paste.

    Add the milk into a large pan and bring to a simmer, add flour paste.

    Whisk paste into milk until dissolved.

    It will thicken once it comes to a boil.

    Add in seasonings and salt and pepper.

    Add in shredded cheese and stir to melt.

    Add in the cubed cheese and stir until melted.

    Taste for seasoning, and enjoy!

    If you like the texture of the crunchiness that you would get from baking, take panko bread crumbs and butter and cook in a pan until olden brown.
