Creamy Poached Egg Pots

  • 2 1/2 cups spinach
  • 4 tbsp. low-fat creme fraiche
  • 2 large eggs
  • Freshly ground black pepper to season
  • 1 slice smoked salmon
  • 2 small slices whole wheat bread

    Heat oven to 350 F.

    Place spinach in microwavable bowl. Wilt in microwave for 30 seconds on High; drain.

    Divide creme fraiche and spinach between ramekins. Crack an egg on top of each, and season with black pepper.

    Place ramekins in a baking pan. Fill halfway with warm water. Bake for 15 minutes until egg is set with a runny yolk, or 5 minutes longer if you prefer your egg completely set.

    Top each with smoked salmon. Serve with toast.
