Creamy Rice Pudding

  • 1 1/4 c. raw rice, cooked and drained
  • 1 1/2 c. sugar or less
  • 2 (8 oz.) cream cheese
  • 1 Tbsp. lemon extract
  • 1 Tbsp. vanilla
  • 12 eggs, well beaten
  • 1 can evaporated milk
  • 1/2 c. regular milk
  • cinnamon to taste

Directions

    Cream sugar and cream cheese together.

    Beat in eggs, one at a time.

    Then add milk, vanilla and lemon.

    Stir in rice and cinnamon.

    Bake in greased 9 x 13 dish.

    Bake for 1 hour at 350°. Check after 45 minutes.

    When knife inserted in center comes out clean, it is done.

    Rice stays on bottom and the top is like custard and creamy.
