Creamy Rice Pudding

Ingredients

  • 1/2 c. regular rice
  • 1 c. water
  • 1 qt. milk
  • 1 stick margarine
  • 3 eggs, beaten
  • 1/2 c. raisins
  • 1/2 tsp. vanilla
  • 1/2 c. sugar

Directions

    In heavy 2-quart saucepan, boil rice and water 10 minutes.

    Add 1-quart milk and margarine.

    Slowly boil, covered, for 30 minutes. Stir often.

    Add sugar and stir until dissolved.

    Take off heat and add beaten eggs and raisins.

    Cook 1 to 2 minutes.

    Add vanilla. Pour into a 2-quart dish and sprinkle with topping.

    Chill.
