Creamy Rice Pudding

Ingredients

  • 1 qt. milk
  • 1/2 c. rice
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • 1/3 c. butter or margarine
  • 3 eggs, beaten
  • 1/2 c. raisins
  • 1/4 tsp. salt
  • cinnamon or nutmeg

Directions

    Mix rice with 2 cups milk in top of double boiler.

    Cook over hot water until rice is tender.

    Add raisins and butter.

    Combine eggs, sugar, vanilla, salt and remaining milk.

    Stir into hot rice mixture.

    Pour into a greased 1 1/2-quart baking dish.

    Sprinkle with cinnamon or nutmeg.

    Set in pan and fill pan 1/2 full of warm water.

    Bake in slow oven (325°) for 30 minutes or until set. Makes 6 nice servings.
