  • 1 qt. milk
  • 1 c. uncooked rice
  • 1/2 tsp. salt
  • 1 1/2 tsp. vanilla extract
  • 4 egg yolks, beaten
  • 1/2 c. half and half
  • 1 tsp. ground cinnamon

Directions

    Combine first 4 ingredients in saucepan; cover and cook over very low heat, about 30 minutes or until rice is tender and milk has been absorbed.

    Stir occasionally.

    Combine remaining ingredients in bowl and gradually stir about 1/4 of hot rice mixture into yolk mixture.

    Add yolk mixture to remaining rice mixture.

    Cook over low heat, stirring constantly, until boiling. Remove from heat.
