- 1 vanilla bean, split and scraped
- 6 lg. egg yolks, chilled
Directions

1Preheat oven to 300°.

2Adjust the rack to the center of the oven.

3Place six 6-oz. ramekins in a larger baking pan, making sure the larger pan is at least 1/2 inch deeper than the ramekins. Bring the cream, 1/2 c. sugar, and the vanilla bean and scraped seeds to a simmer in a large saucepan over medium heat.

4Remove from the heat, cover the pan with plastic film and let steep for 15 minutes.
