Ingredients
- 2 Tbsp. olive oil
- 1/2 c. onion, chopped
- 2 cloves garlic, minced
- 1/2 c. green pepper, chopped
- 1 1/2 c. canned tomatoes
- 1 small or medium eggplant, peeled and cubed
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. cayenne pepper
- 2 Tbsp. melted butter or margarine
- breadcrumbs, optional
Directions

1Saute onion in olive oil and butter.

2Add garlic, green pepper, tomatoes, eggplant, salt, and peppers.

3Cover and cook over medium heat for 10 minutes.

4Uncover and cook until thick, stirring occasionally.

5If desired, at serving time, add breadcrumbs to thicken.

6Yields 4 servings.

7Serve over rice.

8It is an excellent side for seafood.
