- 2 Tbsp. olive oil
- 1 c. onion, chopped
- 1/2 c. celery, chopped
- 1/2 green pepper, chopped
- 2 cloves garlic, minced
- 28 oz. can tomatoes, cut up
- 12 oz. can vegetable juice cocktail
- 1/2 c. water
- 1/4 tsp. salt (optional)
- 1/4 tsp. thyme leaves
- 1/4 tsp. pepper
- 1 (10 oz.) pkg. mixed vegetables
- dash of Tabasco sauce
- 1 lb. fish fillets, cut up*
Directions

1In saucepot, saute onion, celery, green pepper and garlic in oil until crispy-tender.

2Stir in rest of ingredients, except fish.

3Cook 20 minutes, until tender.

4Add fish and cook 12 minutes longer.
