Creole Fish Chowder

Ingredients

  • 2 Tbsp. olive oil
  • 1 c. onion, chopped
  • 1/2 c. celery, chopped
  • 1/2 green pepper, chopped
  • 2 cloves garlic, minced
  • 28 oz. can tomatoes, cut up
  • 12 oz. can vegetable juice cocktail
  • 1/2 c. water
  • 1/4 tsp. salt (optional)
  • 1/4 tsp. thyme leaves
  • 1/4 tsp. pepper
  • 1 (10 oz.) pkg. mixed vegetables
  • dash of Tabasco sauce
  • 1 lb. fish fillets, cut up*

Directions

    In saucepot, saute onion, celery, green pepper and garlic in oil until crispy-tender.

    Stir in rest of ingredients, except fish.

    Cook 20 minutes, until tender.

    Add fish and cook 12 minutes longer.

    Serves 4.
