- 2 lbs fresh haddock fillets
- 1 1/2 cups fresh tomatoes, chopped
- 1/2 cup green pepper, chopped
- 1/3 cup lemon juice
- 1 tablespoon cooking oil
- 2 teaspoons salt
- 2 teaspoons dry onion flakes
- 1 teaspoon basil leaves, crushed
- 1/4 teaspoon pepper, coarse
- 1/8 teaspoon hot sauce
Directions

1Preheat oven to 500*.

2Place fillets in baking dish.

3Combine tomatoes, green peppers, lemon juice, oil, salt , onion flakes, basil leaves, pepper, and hot sauce.

4Spoon tomato mixture over fillets.

5Bake fillets for 5 -8 min or until fillets flake easily.

6Place fillets on a warm platter.

7Garnish with tomato and green pepper rings.
