Ingredients
- 3 slices bacon, diced
- 1/2 c. chopped onion
- 1/2 c. green pepper
- 1 c. sliced okra
- 1 fresh tomato, peeled and chopped
- 1 c. uncooked instant rice
- 2 c. chicken broth
- 1 tsp. salt
- 1/4 tsp. red pepper
Directions

1Saute bacon until crisp.

2Drain off all fat except 2 tablespoons.

3Add onion, green pepper and okra.

4Cook until vegetables are tender-crisp.

5Stir in rice, broth, salt and red pepper.

6Bring to a boil.

7Reduce heat, cover and simmer 15 minutes.

8Add tomatoes and fluff lightly.

9Replace lid and let set about 15 minutes before serving.

10Yields 6 servings.
