- 1 cup dried pinto beans
- 1 can (16 oz.) tomatoes, cut up
- 1 cup chopped green pepper
- 3 cups hot cooked rice
- 1/2 tsp thyme
- water (enough to cover beans)
- 1 cup chopped onion
- 1 bay leaf
- 1-1/2 tsp pepper

1In large saucepan, cover beans with water and soak overnight. Bring to boil and

2cook two minutes. Remove from heat. Cover and let stand 1 hour. Add tomatoes, onion, green peppers, garlic, bay leaf, salt, thyme and pepper. If necessary, add water to cover. Bring to a boil. Cover and simmer 1-1/2 to 2 hours or until beans are tender, adding more water if beans are dry.

3Remove bay leaf and serve with rice. Serves 4.
