Ingredients
- 2 c. red beans
- 1/2 lb. cured ham, sliced and diced
- 1/4 c. salad oil
- 2 medium sized onions, chopped
- 2 Tbsp. flour
- 1 can tomato sauce
- 1/4 tsp. red crushed pepper
Directions

1Soak red beans in about 6 cups of cold water overnight.

2In a large pot, saute ham in salad oil until lightly browned.

3Add chopped onions.

4Saute until transparent, but not brown, stirring constantly.

5Add red beans and more water to cover.

6Cook over low heat 2 to 3 hours.

7Stir occasionally to prevent from sticking, also add more water if necessary.

8When beans are done, mix flour with tomato sauce, stirring to make a smooth paste and stir into beans.

9Add red pepper.

10Simmer for 15 minutes more.

11Serve over cooked rice.

12Makes 8 servings.
