Ingredients

  • Flour
  • 2 pounds round steak, cut in 1-inch strips
  • 1/4 cup oil
  • 1 medium onion, chopped
  • 2 bell peppers, chopped
  • 1 16-ounce can tomatoes
  • 1 8 -ounce can tomato sauce
  • 1 can water
  • 2 cups corn, cooked
  • 2 cups butterbeans, cooked
  • 1 cut okra, sliced
  • 1 bay leaf
  • dash tabasco
  • salt and pepper
  • 2 cups cooked rice
  • parsley

    Lightly flour meat and brown in hot oil; set aside.

    Saut onion and pepper.

    Combine all ingredients except parsley, simmer 45-50 minutes.

    Serve over steamed rice tossed with parsley. Serves 8.
