Ingredients
- 1 large green pepper, sliced thin
- 1 1/2 c. sliced green onions
- 1 (14 1/2 oz.) can tomatoes
- 1 (8 oz.) can tomato sauce
- salt and pepper to taste
- 1/2 tsp. dried thyme
- 1 bay leaf
- dash of hot pepper sauce
- 1 1/2 lb. flounder fillets
Directions

1Cook green onions and green pepper in skillet until tender. Stir in tomatoes, tomato sauce, salt, pepper, thyme and bay leaf. Simmer gently for 15 minutes.

2Remove bay leaf.

3Arrange fish in a shallow baking pan. (Pan should be coated with cooking spray.) Spoon sauce over fillets.

4Bake at 375° for 15 minutes or until fish flakes easily with a fork.

5Serve with rice.
