- 6 Tbsp. olive oil
- 1/4 c. chopped onion
- 1 clove garlic, chopped
- 1 (28 oz.) can tomatoes with liquid
- 1/2 c. dry white wine
- 2 Tbsp. finely chopped parsley
- 1/2 tsp. oregano
- 1 tsp. salt
- 1 1/2 lb. raw shrimp, cleaned
- Parmesan cheese (can use Feta cheese)
Directions

1Heat oil over medium heat in heavy skillet.

2Add onion and garlic.

3Cook until soft and transparent, about 5 minutes.

4Stir in tomatoes, wine, 1 tablespoon parsley, oregano, salt and pepper. Bring to a boil and cook briskly until pureed.

5Add shrimp; cook over moderate heat for 5 minutes or until pink and firm.

6Stir in cheese and remaining parsley.

7Serve with pasta.
