Crisp Fried Shallots

- 5 shallots
- 2 garlic cloves
- 12 cup oil, in bottom of frying pan
Directions

1Peel the shallots and garlic.

2Slice VERY finely.

3Spread them out on a tray to dry out for a few hours before cooking.

4Heat the oil until very hot and deep fry the garlic and THEN onion (in batches) until they are golden brown.

5Drain on paper towels.

6Note that you have to fry the garlic and onion separately, because the garlic cooks a lot quicker than the onion.

7Season with salt just before you use.

8OR store them in an airtight container in the freezer.
