Crisp Lemon Thins

  • 1/2 c. butter
  • 3/4 c. firmly packed brown sugar
  • 1 egg
  • 3/4 c. flour
  • 1/2 c. almonds, chopped
  • 1/4 c. quick cooking rolled oats
  • 1 Tbsp. grated lemon rind
  • 1/2 tsp. French's lemon extract

    Cream the butter.

    Gradually add the brown sugar, creaming well. Blend in 1 unbeaten egg and 3/4 cup flour.

    Mix thoroughly. Stir in the almonds, oats, lemon rind and lemon extract. Drop by teaspoonfuls at least 3-inches apart onto greased baking sheet. Bake in moderate oven at 350° for 7 to 10 minutes until edges are golden brown.

    Remove from sheet immediately.
