- 1 lb. lean ground beef
- 1/2 c. chopped onion
- 1 clove garlic, minced or pressed
- 1 tsp. salt
- 1/2 tsp. chili powder
- 2 c. shredded Monterey Jack cheese
- 1 c. diced tomatoes
- 4 large wheat flour tortillas
- oil for frying tortillas
Directions

1Brown together ground beef, onion and garlic in a heavy frying pan over medium heat.

2Stir until meat loses its pinkness.

3Add salt and chili pepper.

4Place 1/2 cup ground beef filling, 1/2 cup cheese and 1/2 cup diced tomatoes onto 1/2 of each tortilla.

5Fold other half over.

6Remove any air pockets by pressing down.

7Pour oil into skillet to 1/4-inch depth.

8When oil is hot, place filled tortillas into pan a few at a time.

9Saute over medium to high heat until golden on each side, 45 seconds on each side.

10Remove from pan onto paper towels.

11Cut into wedges and serve.
