- 1/2 c. dry roasted peanuts
- 1/4 c. cornflake crumbs
- 1/3 c. buttermilk-based salad dressing
- 2 1/2 lb. chicken pieces or cut-up fryer
- paprika
Directions

1Chop peanuts finely in blender or food processor.

2Combine with cornflake crumbs on a piece of waxed paper.

3Pour salad dressing into pie plate.

4Remove skin from chicken and dip each piece in salad dressing, then roll in crumb mixture to coat. Arrange chicken on microwave meat or bacon rack, thick pieces toward the outside, thinner or bony pieces toward the center. Sprinkle with paprika.

5Cover with waxed paper.

6Cook in microwave on High for 15 to 18 minutes, rotating rack midway through cooking.

7Let stand for 5 minutes before eating, or cool slightly and refrigerate if transporting to a picnic!
