  • 1 c. Italian-style panko breadcrumbs
  • 4 boneless, skinless chicken-breast halves
  • 3 tbsp. olive oil

    Spread breadcrumbs on a sheet of wax paper, dip chicken into egg mixture, then coat in breadcrumbs.
