  • 1/2 c. Hellmann's mayonnaise
  • 1 Tbsp. instant onion
  • 1/4 tsp. salt
  • 1/3 c. Italian bread crumbs
  • 1/3 c. Parmesan cheese
  • 1 eggplant, cut in 1/2-inch slices (don't peel)

Directions

    In small bowl, stir together first 3 ingredients.

    Combine bread crumbs and Parmesan cheese. Brush both sides of eggplant with mayonnaise mixture.

    Coat with crumbs.

    Place on cookie sheet and bake in a 350° oven until golden brown.
