  • 1/2 c. Hellmann's mayonnaise
  • 1 Tbsp. instant minced onion
  • 1/4 tsp. salt
  • 1/3 c. bread crumbs
  • 1/3 c. Parmesan cheese
  • 1/2 tsp. dried Italian seasoning
  • 1 eggplant, cut crosswise in 1/2-inch slices

    Mix first 3 ingredients.

    On wax paper, combine next 3 ingredients.

    Brush both sides with mayonnaise mixture.

    Coat with crumb mixture.

    Place in pan or on cookie sheet.

    Bake at 425° for 15 to 17 minutes.
