- 6 medium catfish, cleaned and dressed
- 1 tsp. salt
- 3/4 tsp. pepper
- 1 (2 oz.) bottle hot sauce
- 2 c. self-rising corn meal
- vegetable oil
Directions

1Sprinkle catfish with salt and pepper; place in shallow dish. Add hot sauce; marinate 1 to 2 hours in fridge.

2Place corn meal in plastic bag.

3Drop in fish, one at a time; shake until fish are completely coated.

4Fry in deep, hot oil (375°) until fish float on top and are golden brown.

5Drain well.

6Garnish with lemon slices. Serves 6.
