- 1/4 c. margarine or butter
- 1 1/2 c. mashed potato buds (prefer Betty Crocker)
- 1/3 c. grated Parmesan cheese
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 1/2 to 3 lb. broiler-fryer chicken, cut up
- 1 egg, beaten
Directions

1Heat margarine in 10-inch skillet over Medium-low heat until melted.

2Stir in potatoes, cheese, salt and pepper.

3Cook, stirring constantly, until potatoes are brown, 5 to 8 minutes.

4Dip chicken into egg and roll in potato mixture.

5Place chicken pieces, skin side up, with thickest parts to outside edges in rectangular microwavable dish (12 x 7 1/2 x 2-inches).

6Cover with waxed paper. Cook on High (100%) 10 minutes.

7Rotate dish 1/2 turn.

8Cook 8 to 12 minutes longer.

9Yields 6 servings.
