- 2 1/2 c. finely crushed potato chips
- 2 Tbsp. chopped parsley
- 1/4 c. lemon juice (from concentrate)
- 1 lb. fish fillets
- 1/2 c. grated Parmesan cheese
- 1/2 c. mayonnaise or salad dressing
Directions

1Preheat oven to 400°.

2Combine chips, cheese and parsley.

3In small bowl, combine mayonnaise and 2 tablespoons lemon juice.

4Dip fish in remaining 2 tablespoons of lemon juice, then mayonnaise mixture, then chip mixture.

5Arrange in greased baking dish. Bake 5 to 10 minutes or until fish flakes with fork.

6Refrigerate leftovers. Makes 4 servings.
