- 2 tablespoons olive oil
- 2 lbs potatoes, peeled,cut into 1 inch pieces

1Melt butter with oil in a large heavy skillet.

3Cover and cook until potatoes are tender, about 10 more minutes.

4Transfer potatoes to a heavy baking sheet.
