- 2 1/2 c. pecan halves
- 1 c. sugar
- 1/2 c. water
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 1/2 teaspoon vanilla
- Butter
Directions

1Heat 2 1/2 c. pecan halves in moderate oven at 375 degrees for 5 min, stirring once.

2Butter sides of heavy 2 qt saucepan.

3In saucepan, combine sugar, water, cinnamon and salt.

4Heat and stir till sugar dissolves and mix boils.

5Cook with stirring to soft ball stage, 236 degrees.

6Remove from heat.

7Beat by hand 1 minute or possibly till mix just begins to get creamy.

8Add in 1 1/2 tsp.

9vanilla and the hot nuts.

10Stir gently till nuts are well saturated and mix becomes creamy.

11Spread on wax paper.

12Separate at once using 2 spoons or possibly forks.

13Makes about 1 lb.
