  • 2 1/2 c. pecan halves
  • 1 c. sugar
  • 1/2 c. water
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • Butter

Directions

    Heat 2 1/2 c. pecan halves in moderate oven at 375 degrees for 5 min, stirring once.

    Butter sides of heavy 2 qt saucepan.

    In saucepan, combine sugar, water, cinnamon and salt.

    Heat and stir till sugar dissolves and mix boils.

    Cook with stirring to soft ball stage, 236 degrees.

    Remove from heat.

    Beat by hand 1 minute or possibly till mix just begins to get creamy.

    Add in 1 1/2 tsp.

    vanilla and the hot nuts.

    Stir gently till nuts are well saturated and mix becomes creamy.

    Spread on wax paper.

    Separate at once using 2 spoons or possibly forks.
