Croatian Casserole

Ingredients

  • 1/4 c. oil
  • 1 1/2 lb. beef round, cubed
  • 3 onions
  • 3 tomatoes
  • 1 green pepper
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 3/4 c. sliced celery
  • 2 c. cubed eggplant
  • 3 zucchini, sliced

Directions

    Heat oil; add beef and brown on all sides.

    Pour off fat and turn beef and drippings into large casserole.

    Peel onions and quarter; slice tomatoes and green pepper and add to meat. Sprinkle with salt and pepper.

    Cover and bake at 350° for 1 hour and 15 minutes.

    Add celery, eggplant and zucchini.

    Sprinkle with remaining salt and pepper.

    Cover and bake for 45 minutes longer. Makes 6 generous servings.

    Serve over rice, noodles, etc.
