- 2 (10 oz.) pkg. frozen cauliflower, thawed
- 1 (10 oz.) pkg. frozen carrots, thawed
- 1/4 c. chopped onion
- 2 Tbsp. oleo
- 1/4 c. milk
- 1 can cream of mushroom soup
- 1 c. diced Velveeta
- cracker crumbs
Directions

1Grease crock-pot.

2Brown onion in butter.

3Add milk, soup and cheese.

4Heat through.

5Layer vegetables in crock-pot.

6Pour cheese mixture over.

7Cook on low for 4 to 5 hours or 2 to 3 hours.

8Last hour, cook with lid off and sprinkle on crumbs.
