  • 1 (10 oz.) pkg. frozen broccoli, thawed
  • 2 (10 oz.) pkg. frozen cauliflower, thawed
  • 1 (10 oz.) pkg. frozen carrots, thawed
  • 1/4 c. chopped onion
  • 2 Tbsp. oleo
  • 1/4 c. milk
  • 1 can cream of mushroom soup
  • 1 c. diced Velveeta
  • cracker crumbs

    Grease crock-pot.

    Brown onion in butter.

    Add milk, soup and cheese.

    Heat through.

    Layer vegetables in crock-pot.

    Pour cheese mixture over.

    Cook on low for 4 to 5 hours or 2 to 3 hours.

    Last hour, cook with lid off and sprinkle on crumbs.
