- 12 cup milk
- 12 cup boiling water
- 2 14 teaspoons active dry yeast
- 1 teaspoon granulated sugar
- 1 12 teaspoons salt
- 1 34 cups all-purpose flour
- 14 teaspoon baking soda, dissolved in 1 tablespoon hot water
Directions

1Combine milk and boiling water in a large bowl.

2Cool until lukewarm.

3Add yeast and sugar.

4Let sit for 5 minutes, or until bubbly.

5Mix salt with flour.

6Add to yeast mixture and beat with a spoon for several minutes.

7Let batter rise until doubled in bulk and slightly bubbly.

8Beat dissolved soda into batter.

9Let rise again until doubled in bulk.

10Heat a griddle or large frying pan over medium-hot heat.

11Position buttered rings in pan.

12Spoon batter into rings to a depth of about 1/2-inch.

13Cook until dry and bubbly on top.

14Remove rings, turn crumpets and brown lightly on the other side.

15Transfer to a rack to cool.

16Toast and butter to serve.
