Crusted Lamb Racks

Ingredients
- 3 1/2 tbsp butter, melted
- 1/2 tsp smoked paprika
- 1 tbsp flaky sea salt
- 1/2 tsp ground black pepper
- 1 None lemon, zested
- 2 tbsp coarsely grated ginger
- 2 (16 oz) lamb racks, trimmed
- 1/2 cup dried breadcrumbs
Directions

1Preheat oven to 400°F.

2Combine butter, paprika, flaky sea salt, pepper and lemon zest. Squeeze in juice from grated ginger.

3Brush lamb with seasoned butter then coat in breadcrumbs. Arrange, meat-side up, in a shallow baking dish. Roast for 20 mins, until crust is golden brown and meat is cooked to your liking. Transfer to a cutting board and let rest for 7 mins. Slice into cutlets. Let cutlets rest for 2-3 mins then transfer to a warm serving plate.
