Crustless Coconut Pie

  • 12 eggs
  • 6 c. sugar
  • 6 c. milk
  • 1 1/2 c. self-rising flour
  • 1 lb. margarine, melted
  • 6 c. coconut
  • 2 Tbsp. vanilla (optional)

Directions

    Whip eggs; mix together sugar and flour.

    Then add milk, coconut and butter.

    Add 2 tablespoons vanilla if desired.

    If no crust is used, grease 6 to 7 pie plates well.

    Pour mix into crusts or plates.

    Bake at 325° for approximately 45 minutes. Monitor temperature so crust will not brown before filling begins to set and brown.

    Yields 8 pies in crust or 6 to 7 without crust.
