- 1 c. cornmeal
- 1/2 c. all-purpose flour
- 1 Tbsp. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 egg, beaten
- 1 c. buttermilk
- 1/4 c. bacon drippings
Directions

1Combine first 6 ingredients; mix well.

2Add egg and buttermilk.

3Stir until smooth.

4Place bacon drippings in a 9-inch cast-iron skillet.

5Heat at 425° for 5 minutes.

6Remove skillet from oven and pour hot drippings into batter; mix well. Quickly pour batter into skillet.

7Bake at 425° for 20 to 25 minutes or until golden.
