  • 3 oz (84 grm) fresh ginger root
  • 3/4 cup (175 ml) sugar
  • boiling water
  • sugar for dusting
  • 1 drop yellow food color optional

    Shave/slice ginger 1/16 inch thick.

    Place in 2 cups (475 ml) of boiling water with 1/4 cup (60 ml) of sugar.

    Boil 10 min.

    Strain.

    Place boiled ginger slices in fresh 2 cups (475 ml) of water with 1/4 cup (60 ml) of sugar and food color.

    Boil 10 min.

    Strain.

    This may be repeated 2 more times for a mild product or proceed for regular.

    Place boiled ginger on paper towels to dry.

    Sprinkle heavily with sugar on both sides.

    Allow to air dry for 24 hours to crystallize.
