- 1 tablespoon Salt - Kosher
- .5 teaspoon Cumin
- 1 teaspoon Black Pepper - Fresh Ground
- .5 cups Lemon Juice - Fresh Squeezed
- .5 cup Dry Sherry
- 2 cups Onions - Spanish - Sliced Thick
Directions

1Mash garlic, oregano, salt, cumin and pepper into paste

4Cover & refrigerate for 48 hours... yup 48 hours! Turning several times

6Bake at 350° for 1 hour uncovered

7Add the marinade, cover and bake for 3 hours - baste frequently
