  • 5 pound Pork Loin
  • 6 cloves Garlic
  • 1 teaspoon Dried Oregano
  • 1 tablespoon Salt - Kosher
  • .5 teaspoon Cumin
  • 1 teaspoon Black Pepper - Fresh Ground
  • .5 cups Lemon Juice - Fresh Squeezed
  • .5 cup Dry Sherry
  • 2 cups Onions - Spanish - Sliced Thick

    Mash garlic, oregano, salt, cumin and pepper into paste

    Pierce meat & rub paste onto it

    Add sherry, lemon juice & onions

    Cover & refrigerate for 48 hours... yup 48 hours! Turning several times

    Remove the Marinade
  6. 6
    Bake at 350° for 1 hour uncovered

    Add the marinade, cover and bake for 3 hours - baste frequently

    Uncover - Bake for 1/2 an hour ( internal temperature 180°
