Cuban Water Bread

Ingredients
- 2 Tbsp. sugar
- 2 Tbsp. dry yeast
- 1 Tbsp. salt
- 2 c. lukewarm water
- 6 c. unbleached all-purpose flour
Directions

1Dissolve yeast, salt and sugar with some of the water.

2With wooden spoon, beat flour into rest of water until you have a batter.

3Pour in yeast mixture and mix.

4Add flour until right consistency.

5Knead.

6Cover bowl with a damp cloth (after putting mixture into bowl).

7Let rise.

8Punch down.

9Divide into 2 round loaves.

10Put on greased baking sheet.

11Sprinkle loaves with cornmeal.

12Let rise 5 minutes.

13Cut a cross on top with sharp knife.

14Put pan in cold oven with cake

15pan of boiling water on bottom of oven.

16Bake at 400° for 45 minutes.

17Serve at once.
