Cucumber Cinnamon Rings

- 2 gal. large cucumber rings (about 15 cucumbers)
- 2 c. dehydrated lime
- 8 1/2 qt. water
Directions

1Put rings in lime water; let stand 24 hours.

2Drain rings; wash in cool water.

3Pour cold water over rings; soak for 3 hours and drain.

4Add 1 cup vinegar, 1 tablespoon alum and 1 small bottle red food coloring.

5Water to cover.

6Heat and simmer for 2 hours. Drain.

7Makes 4 to 5 quarts.
