Ingredients
- 13 cups Rice Vinegar
- 1-23 Tablespoon Granulated Sugar
- 1 teaspoon Kosher Salt
- 2 teaspoons Low Sodium Soy Sauce
- 1- 1/2 teaspoon Fresh Ginger, Grated
- 2 whole Large Cucumbers
- 1/2 Tablespoons Sesame Seeds, Toasted
Directions

1In a medium bowl, combine vinegar, sugar, salt, soy sauce and ginger and mix well.

2Partially peel the cucumbers, leaving alternating strips of peel on each cucumber.

3Slice cucumbers in half lengthwise.

4Using a spoon, carefully remove the seeds and discard.

5Slice cucumbers horizontally and very thinly.

6Add cucumber slices to vinegar mixture and toss to coat.

7Refrigerate for 30 minutes to one hour.

8Serve cold.

9Sprinkle with toasted sesame seeds.
