Curried Baked Rice

Ingredients

  • 4 c. hot water
  • 1 c. rice
  • 1 c. canned tomatoes, drained
  • 1 1/2 tsp. salt
  • 1/2 c. onion, thinly sliced
  • 1/2 c. green pepper, sliced
  • 4 Tbsp. butter, melted
  • 1 1/2 tsp. curry powder

Directions

    Pour uncooked rice into Dutch oven and pour hot water over rice.

    Place Dutch oven where it will remain hot, but will not cook, about 45 minutes.

    Preheat oven to 375°.

    Chop tomatoes and add tomatoes, salt, onion, green pepper, butter and curry powder to rice.

    Bake, uncovered, 1 1/2 hours.

    Stir from time to time. (At first there will be excess liquid, but gradually the rice will absorb it.) Remove from oven while rice is still moist.
