- 1 c. sliced mushrooms
- 2 onions, chopped
- 1/2 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 1 c. basmati rice (raw)
- 1/4 tsp. salt
- 1 1/2 c. chicken broth
- 1 1/2 tsp. curry powder
Directions

1Spray a nonstick skillet with cooking spray and heat.

2Saute mushrooms, onions and peppers for about 5 minutes or until tender. Add rice, curry, salt and chicken broth.

3Bring to boil.

4Reduce heat to simmer; cover and cook 20 to 25 minutes until rice is tender.

5Serves 4.
