- 4 carrots (3 c.)
- 1 can mandarin oranges
- 2 Tbsp. butter
- 1 tsp. curry powder
- 1/2 tsp. salt
- 1 lemon juice
- 1 green onion, thinly sliced
Directions

1Cut carrots into 1/4-inch slanting slices.

2Drain the oranges, reserving 3 tablespoons juice.

3In a wide frying pan over medium-high heat, melt butter.

4Add carrots and orange juice. Cook, covered until carrots are tender and most of the juice has evaporated.

5In a cup, stir together curry powder, salt and lemon juice.

6Add and let cook for 1 minute, then add the remaining ingredients and cook three minutes more.
