Ingredients

  • 2 lb. chicken breasts (2 whole with bone in)
  • 1 Tbsp. butter or margarine
  • 1 small onion, chopped
  • 1 small tart apple, peeled, and cored and chopped
  • 2 Tbsp. flour
  • 1 tsp. seasoned salt
  • 1 tsp. curry powder
  • 1/4 tsp. ginger
  • 1 c. chicken bouillon
  • 1/2 c. undiluted evaporated skimmed milk
  • 2 Tbsp. golden raisins
  • 1 Tbsp. lemon juice
  • salt to taste

Directions

    Bone chicken and discard skin.

    Cut each half breast into 10 - 12 strips.

    Saute chicken strips in the butter in nonstick coated skillet, stirring until opaque.

    Add onion and apple and cook a few minutes.

    Stir in flour and seasonings.

    Add bouillon and cook, stirring, until slightly thickened.

    Add milk, raisins, lemon juice, and salt.

    Mix well and heat thoroughly.

    Serve with Rice. Serves 8.
