  • 1 roasting chicken (cut up)
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 12 cup onion (chopped)
  • 12 cup celery (chopped)
  • 12 cup carrot (chopped)
  • 1 apple (chopped, granny smith)
  • 1 tomatoes
  • 1 green pepper (chopped)
  • 2 garlic cloves
  • 16 ounces tomatoes (undrained)
  • 3 tablespoons raisins
  • 14 teaspoon red pepper flakes
  • 1 tablespoon curry powder
  • salt
  • 1 tablespoon cornstarch

Directions

    Brown chicken pieces and remove.

    To pan add onion, celery, carrot, apple, tomato, green pepper & garlic and saute.

    Add undrained diced tomatoes, raisins, red peper flakes, curry powder and salt.

    Bring to a boil then add chicken.

    Cover and simmer till done.

    Remove to platter and thicken the juices with the cornstarch and a bit of water.

    Serve over brown rice.
