Curried Chicken Breast

- 3 boneless skinless chicken breast halves
- 1 Tbsp. margarine
- 1/3 c. orange juice
- 1 tsp. dried minced onion
- 1 tsp. curry powder
- 1/2 tsp. ground coriander
- 1/2 c. seedless green grapes, halved
- 1 Tbsp. apricot jam
Directions

1Cook chicken breasts in margarine for 5 minutes or until brown, turning once.

2Add orange juice, onion, curry and coriander.

3Bring to boiling.

4Reduce heat.

5Cover and simmer 5 minutes or until chicken is tender and no longer pink.

6Transfer chicken to heated serving platter, cover to keep warm.

7Over medium heat, bring pan juices to boiling.

8Stir in grapes and jam.
-
9Serve juices and chicken over rice.

10Makes 3 servings.
